Pinterestology: Apple Pie in Apples


I love Pinterest, it is a constant source of inspiration! Following with our new series, Pinterestology, I decided that we would share our apple pie in apples with you. When I first saw these, I thought how wonderful and I cannot wait to try them. Judging from the picture, I figured I could do these in about 20 minutes.

 
I absolutely love the way the pies turned out! They were delicious and my kiddos constantly ask for them again! The directions are quite simple, find apples that sit as flat as possible, cut off the top of the apple. I used a pairing knife and cut a small circle around the inside of the apple, leaving a bit of apple in the inside and the skin in tact. Basically, you want to form a bowl. Once you get the insides carved out, squeeze a lemon on the apple (this will help to keep from browning).

 Take the inside and cut them as small as possible, I actually used a food processor. Mix them with brown sugar, sugar and cinnamon. I added a hint of vanilla because that’s how we roll in this house.

Once the apples filling is mixed, put into the apples and then using a premade pie crust- make the crust. I choose to copy the picture and cut the crust into strips to form a lattice style crust.

Pop the apples into the oven and bake for 25 minutes at 350 degrees.

These are a new staple in our home! Pinterest came through with us!
